Homemade New York Style Strawberry

To make homemade New York-style strawberry cheesecake, follow these steps:


For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the filling:

  • 4 (8 oz) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup sour cream

For the topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water


  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with butter or non-stick cooking spray.
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  3. Press the crumb mixture firmly onto the bottom of the prepared springform pan. Use the back of a spoon or a flat-bottomed glass to press it down evenly.
  4. In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
  5. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream until well combined.
  6. Pour the cream cheese mixture over the prepared crust in the springform pan. Smooth the top with a spatula.
  7. Bake in the preheated oven for 55-60 minutes, or until the center is almost set. It should still have a slight jiggle in the middle.
  8. Remove the cheesecake from the oven and let it cool completely on a wire rack. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight.
  9. While the cheesecake is chilling, prepare the strawberry topping. In a saucepan, combine sliced strawberries, sugar, cornstarch, and water. Cook over medium heat, stirring constantly until the mixture thickens and the strawberries soften, about 5-7 minutes. Remove from heat and let it cool completely.
  10. Once the cheesecake has chilled and the strawberry topping has cooled, spread the strawberry topping evenly over the cheesecake.
  11. Carefully run a knife around the edges of the springform pan to loosen the cheesecake. Remove the sides of the pan.
  12. Slice and serve the New York-style strawberry cheesecake chilled. Enjoy!
