Ingredients:

  • 4 lbs beef short ribs
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 carrots, peeled and diced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup balsamic vinegar
  • 1/4 cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • Fresh parsley for garnish (optional)

Instructions:

Preparing the Short Ribs:

  1. Seasoning the Ribs:
    • Season the short ribs generously with salt and black pepper.
  2. Searing the Ribs:
    • In a large, oven-safe pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned. Work in batches to avoid overcrowding.

Creating the Braising Sauce:

  1. Sautéing Aromatics:
    • In the same pot, sauté the chopped onion, diced carrots, and minced garlic until softened.
  2. Deglazing the Pot:
    • Pour in beef broth, balsamic vinegar, tomato paste, Worcestershire sauce, soy sauce, dried thyme, and add bay leaves. Stir well to deglaze the pot.
  3. Returning the Ribs:
    • Place the seared short ribs back into the pot, nestling them into the braising liquid.
  4. Braising in the Oven:
    • Cover the pot and transfer it to a preheated oven at 325°F (163°C). Let it braise for 2.5 to 3 hours or until the meat is fork-tender.

Finishing Touch:

  1. Removing Bay Leaves:
    • Once done, carefully remove the bay leaves from the pot.
  2. Garnishing:
    • Optionally, garnish with fresh parsley for a burst of color and freshness.
  3. Serving Suggestions:
    • Serve the Balsamic Braised Short Ribs over mashed potatoes, polenta, or a bed of creamy risotto.
