  • 3 ripe bananas, mashed
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 teaspoon vanilla extract

  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sour cream or Greek yogurt

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, mash the ripe bananas with a fork or potato masher.
  3. Melt the butter in a microwave-safe bowl and add it to the mashed bananas. Stir in the vanilla extract.
  4. Add the baking soda and a pinch of salt to the banana mixture and mix well.
  5. In a separate bowl, beat the granulated sugar, brown sugar, and eggs until well combined.
