ITALIAN DRUNKEN NOODLES

Italian Drunken Noodles is not a traditional Italian dish; instead, it’s a popular Thai-inspired dish that combines Italian and Thai flavors. It typically features wide rice noodles, Italian sausage, and a flavorful sauce made with ingredients like garlic, tomatoes, chili, and various herbs. The term “drunken” in the name refers to the inclusion of alcohol, often red wine, which adds richness and depth to the dish.

Here’s a simple recipe for Italian Drunken Noodles:

Ingredients:

  • 8 oz wide rice noodles
  • 1 lb Italian sausage, casings removed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup red wine
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish
  • Grated Parmesan cheese (optional)

Instructions:

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the Italian sausage and break it up with a spatula. Cook until browned and cooked through.
  3. Add minced garlic and red pepper flakes to the skillet, sautéing for about 1-2 minutes until fragrant.
  4. Stir in the sliced onion and bell pepper, cooking until they become tender.
  5. Pour in the diced tomatoes (with their juice) and red wine. Add dried oregano, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 10-15 minutes, allowing the flavors to meld.
  6. Add the cooked rice noodles to the skillet, tossing them with the sausage and vegetable mixture until well combined and heated through.
  7. Taste and adjust the seasoning if necessary. Garnish with fresh basil or parsley.
  8. Serve hot, optionally topped with grated Parmesan cheese.
