  • 2 pounds beef tips or stew meat
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1/4 cup tomato paste
  • 1/4 cup red wine (optional)
  • 1/4 cup water
  • 3 tablespoons cornstarch (for thickening)

In a large bowl, combine flour, salt, pepper, garlic powder, onion powder, thyme, rosemary, and paprika.

    1. Add the beef tips to the flour mixture and toss until the beef is well coated.
    2. Heat the vegetable oil in a large skillet over medium-high heat. Brown the beef tips on all sides. You may need to do this in batches to avoid overcrowding the pan.
    3. Once the beef tips are browned, transfer them to the slow cooker.
    4. In the same skillet, add chopped onions and minced garlic. Sauté until the onions are soft and translucent.
    5. Add the sautéed onions and garlic to the slow cooker with the beef tips.
    6. In a bowl, whisk together beef broth, soy sauce, Worcestershire sauce, tomato paste, red wine (if using), and water. Pour this mixture over the beef tips.
    7. Cover the slow cooker and cook on low for 6-8 hours or until the beef is tender.
    8. About 30 minutes before serving, mix cornstarch with a little water to create a slurry. Stir the slurry into the slow cooker to thicken the gravy. Allow it to cook for an additional 30 minutes.
    9. Taste and adjust the seasoning if needed. Serve the beef tips and gravy over mashed potatoes, rice, or noodles.
