Oven-roasted chicken

Ingredients:

  • 6 bone-in chicken thighs, skin-on (about 5–6 ounces each)
  • 2 tablespoons of olive oil
  • 2–3 teaspoons of chicken seasoning or Italian seasoning
  • Salt and pepper to taste

Directions:

  1. Preheat the broiler to 425 degrees Fahrenheit (ca. 218 °C). Line a baking sheet with aluminum foil and place a baking rack on top.
  2. Pat the chicken thighs dry with a paper towel to remove any moisture.
  3. Coat the chicken thighs with olive oil and season them with the chicken seasoning, salt, and pepper.
  4. Arrange the seasoned chicken thighs on the prepared rack and bake for 35 to 40 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit (ca. 74 °C).
  5. If desired, broil the chicken for an additional 2–3 minutes to crisp up the skin.
  6. Enjoy your delicious chicken thighs!

Note: You can also brush the chicken with a bit of olive oil before broiling for a more golden and crispy skin.
