1 tablespoon baking powder
1 teaspoon salt
2 cups all-purpose flour
1/2 cup cold unsalted butter, cubed
3/4 cup milk
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon dried parsley
1/4 cup melted butter
Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, and salt.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Stir in the milk until a soft dough forms.
In a separate bowl, mix together the shredded mozzarella cheese, grated Parmesan cheese, garlic powder, and dried parsley.
Divide the biscuit dough into 12 equal portions. Flatten each portion into a circle.
Place a spoonful of the cheese mixture onto each dough circle. Fold the dough over the cheese and pinch the edges to seal, forming a ball.
Place the filled biscuit bombs seam-side down on the prepared baking sheet.
Brush the tops of the biscuit bombs with melted butter.
Bake in the preheated oven for 15-18 minutes or until golden brown.
Take out of the oven and allow it to cool down a little before serving.
