Southern Goulash

A hearty and flavorful dish, Southern Goulash combines ground chuck, tomatoes, macaroni, and a medley of spices. Topped with melted cheddar and Parmesan cheeses, this comfort food classic is perfect for a cozy family dinner.

Ingredients

1 pound ground chuck

1 medium onion, chopped

⅓ cup red or green bell pepper, chopped

2 cups elbow macaroni, uncooked

1 can stewed tomatoes (15 oz)

1 can tomato sauce (15 oz)

4 cups water

1 tablespoon sugar

1 tablespoon Italian seasoning

1 tablespoon Worcestershire sauce

1 teaspoon seasoning salt

1 teaspoon garlic salt

1 teaspoon black pepper

½ teaspoon Cajun seasoning (optional, e.g., Tony Chachere’s)

½ cup grated Parmesan cheese
Dash of Tabasco

2 cups cheddar cheese, shredded
Directions

In a large pan, brown the ground beef along with the chopped onion and chopped bell pepper.

Add the stewed tomatoes, tomato sauce, sugar, Italian seasoning, Worcestershire sauce, seasoning salt, garlic salt, black pepper, and Cajun seasoning. Stir well to combine.

Add the uncooked macaroni and 4 cups of water to the pan.

Bring the mixture to a boil, then reduce the heat to low. Stir well to ensure the pasta isn’t sticking to the pan.

Cover and simmer until the macaroni is tender and most of the water is absorbed. If the mixture seems too dry, add a little more water. If it’s too liquid, leave the top off for a few minutes and turn up the heat slightly to evaporate the excess water. Be careful not to overcook the pasta.
Before serving, sprinkle the dish with grated Parmesan and cheddar cheeses.
If using an ovenproof pan, place it in the oven to melt the cheese, or simply cover the pan and let the cheese melt on the stove.
