Baked Sweet and Sour Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cornstarch
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup ketchup
  • 1/2 cup apple cider vinegar
  • 2 tbsp. soy sauce
  • 1 tsp. garlic powder
  • 1/2 tsp. sea salt

Directions:

  1. Preheat the oven to 325°F and line a 13 x 9-inch pan with parchment paper. Set aside.
  2. Season chicken breasts with salt and pepper.
  3. Place cornstarch in a large ziplock bag and add chicken breasts. Shake to coat evenly.
  4. In a shallow bowl, beat the eggs. Heat oil in a skillet over medium-high heat until sizzling.
  5. Dip chicken breasts in beaten eggs and add them to the skillet. Sear until golden and then place in the prepared pan.
  6. In a medium bowl, whisk together sugar, ketchup, apple cider vinegar, soy sauce, garlic powder, and sea salt.
  7. Pour the sauce over the chicken and bake for 1 hour, tossing halfway through.
  8. Serve with rice for a delightful meal.
