Twix cookies

Twix cookies are a delicious treat inspired by the popular Twix candy bars. They consist of a shortbread cookie base, topped with caramel and coated in melted chocolate. Here’s a simple recipe to make Twix cookies at home:

Ingredients:

For the Shortbread Cookie Base:

1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract
For the Caramel Layer:

1 cup soft caramels (store-bought or homemade)
2 tablespoons heavy cream
For the Chocolate Coating:

12 oz (about 2 cups) semi-sweet chocolate chips
1 tablespoon vegetable oil

Instructions:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

In a large bowl, whisk together the granulated sugar and softened butter until the mixture is light and fluffy. Add the vanilla extract and mix until well combined.
Gradually add the flour and salt to the butter mixture. Mix until the dough comes together and forms a smooth ball.

Roll out the cookie dough on a lightly floured surface to about 1/4-inch thickness. Use a cookie cutter or a knife to cut the dough into rectangular shapes resembling the size of a Twix bar.

Place the cookies on the prepared baking sheet and prick them with a fork to create small holes (this is optional but gives the cookies an authentic shortbread texture).

Bake the cookies in the preheated oven for 12-15 minutes or until they are just starting to turn golden around the edges.

Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

While the cookies are cooling, prepare the caramel layer. In a microwave-safe bowl, combine the soft caramels and heavy cream. Microwave in 30-second intervals, stirring each time, until the caramels are completely melted and smooth.

Once the cookies are cooled, spread a layer of caramel on top of each cookie.

In another microwave-safe bowl, melt the chocolate chips and vegetable oil in 30-second intervals, stirring in between until the chocolate is smooth and melted.

Dip each caramel-topped cookie into the melted chocolate, coating it completely. Use a fork to lift the cookie out of the chocolate, allowing any excess chocolate to drip off.

Place the coated Twix cookies back on the parchment-lined baking sheet and let them sit at room temperature or in the refrigerator until the chocolate sets.

Once the chocolate has set, your homemade Twix cookies are ready to enjoy!

Store any leftover Twix cookies in an airtight container at room temperature. These delightful treats are perfect for sharing with friends and family or for satisfying your sweet tooth on any occasion!
